Avo-Toast recipes that will brighten up your mornings

Avocado toast is a quick simple breakfast that is delicious and will keep you fueled until your lunch break. Its main ingredient, avocado, is loaded with fiber and potassium and 12 other vitamin rich substances making it a perfect ingredient to start your day! Since avocado toast is such a simple meal you can customize it in various different ways to spice up the recipe! Below I included 5 recipe variations you can add to your avocado toast.



1. Avo, Eggs and Toast

The title for this one is pretty self-explanatory! However topping your avocado toast with a fried egg or a poached one instantly amps up the already pleasant flavor of avocado toast. Top the egg with a pinch of fresh salt and pepper and you have the perfect quick and delicious breakfast!


2. Greek Avo Toast

Channel your inner foodie with this simple yet effective variation. Adding three ingredients will take plan avocado toast to a version that tastes like restaurant quality. To make "Greek" avocado toast I cut up fresh cherry tomatoes into quarters and place them on top of the avocado, then crumble a little bit of feta cheese, and then finish with a drizzle of olive oil and a dash of oregano. Trust me you will want to try this recipe!


3. Strawberry Fields Avo Toast

For my people that love a hint of sweetness in their morning breakfast, this is the variation for you. Core strawberries and slice them, then place them on the avocado toast and add a dash of salt. For an extra kick add a drizzle of balsamic vinegar for a salty sweet tasting breakfast.


4. Caprese Avo Toast

Caprese is one of my favorite dishes that my family makes. The mixture of the fresh ingredients makes one tasty snack. So naturally adding caprese to avocado toast is equally as good. To make it cut cherry tomatoes into quarters and place them on the avocado toast, then cut up triangles of fresh mozzarella cheese and place those on top as well then finish it off with a couple basil leaves and a drizzle of balsamic vinegar.


5. Spicy Southwest Avo Toast

This recipe is for all my chile lovers and my New Mexico locals. To make this breakfast with a kick, scramble two eggs with some cheddar cheese and fresh green chile (or red if you prefer!). Then place this southwest egg scramble on top of your avocado toast and finish it off with a spoonful of your favorite hot salsa.
